  • Sea Island Ham Casserole
  • 2 cups cooked ham, cubed

    1 cup cooked chicken, diced

    3 large yams, parboiled

    1 tablespoon cornstarch

    1/4 cup brown sugar, firmly packed

    1/4 teaspoon ground cloves

    1/4 teaspoon cinnamon

    11/2 teaspoons grated orange peel

    2/3 cup orange juice

    1 cup coffee

    Parboil yams until almost done. Peel, and slice lengthwise into quarter. While yams are boiling, make sauce.Make paste of cornstarch and 3 tablespoons orange juice. Mix until smooth.In small saucepan, combine cornstarch, remaining juice, coffee, orange rind, brown sugar, cloves, and cinnamon.Cook over low heat, stirring constantly, until sauce is thick and clear. Remove from heat.In a 2-quart casserole, arrange yams, ham, and chicken, alternating the ingredients evenly. Pour sauce over the mixture, making sure that all the ingredients are covered with the .Bake casserole at 350 degrees for 20-30 minutes.Delicious served on a bed of rice.Serves 4


  • Western-Style Hamburger
  • 2 tablespoons vegetable oil

    1 large purple onion, peeled and finely minced

    2 garlic cloves, peeled and finely minced

    1 cup chili sauce

    1 tablespoon jalapeno relish

    1/2 cup prepared coffee

    1 tablespoon more vegetable oil

    1-1/2 lobs. lean ground beef

    3 hamburger buns, halved and toasted

    1 cup grated sharp Cheddar cheese

    Heat 2 tablespoons oil in a medium skillet. Saute onion and garlic in oil over low heat until soft but not brown. Add chili sauce and jalapeno relish. Bring to a boil. Lower heat and simmer 5 minutes. Stir in coffee. Keep on low heat 5 to 10 minutes but do not boil after adding coffee. Remove from heat. Keep warm. Heat 1 tablespoons oil in a large skillet. Shape meat into 6 thick patties. Brown in oil over high heat. Turn patties; lower heat. Cook 5 to 10 minutes. Place on toasted buns. Cover with hot sauce and top with grated cheese. Serve immediately. Makes 6 servings.
